Summer veggies in winter…tisk tisk

Its a frigid day here! Goodness! We went from 50* to low 30* overnight…and I’m sad to report we are supposed to get a foot of snow this weekend!! SIGHH…Spring wont you come early? 

I took this picture today that reminded me of spring day…from the car!

Todays eats have been so good! Although, its been cold I had a horrid hankering for a cucumber and tomato sandwich!  This sufficed as much as a winter cuc and tomato could.  Summer cucs and tomatoes are always more flavorful (*and cheaper). This sammy (I can’t stand that word, not sure why I used it, its so Rachel Ray ..but lets go with it)  had haverty with dill cheese , tomato and cucumber plus a small sprinkle of salt + pepper on an English muffin.  Simplicity at its finest.

I love packing my lunch for work.  It just makes life so much easier (*and yummier).  If I don’t pack my lunch I usually waste most of my lunch hour trying to figure out what the heck I’m going to have and when I do decide, its such a haste decision, its either not enough or way too much.  So I try to be diligent about packing my lunch when I can.  It’s just a great way to make sure your eating healthy and not resorting to fast food.  Do you all pack your lunch the night before?  Any fun brown bag ideas?

Of course, this bad boy made an appearance in my day…:)

Ina’s Granola bars, these things are so over-poweringly sweet…but addicting! I’ll be glad when they are gone!  Hopefully, this weekend I’ll have time to test some more out!

    I still have your broc and cheddar soup on my to do list! I’ll get there, I promise! yum yum! The sandwich does sound like a summer class but I bet its almost as tasty in the winter. I love summer tomatoes…nothing like them. I brown bag it pretty much every day. I’m pretty boring though- I like a big salad with lots of mixed veggies and beans topped with salsa for a nice kick. I also usually eat fruit and yogurt.
