Greek Chickpea Salad

This salad screams summer.  All of the flavors play so well together.  I love anything Greek!  This is the perfect summer side dish.  The flavors are great but honestly I might just love it because it take less than 5 min to throw together!!

Simple Lentil Soup

Lentils…ahhhh lentils!! One of my very favorite pantry staples!!  Lentils are such a great source of fiber and protein!  They are small and have a perfect cream bean texture to them.  I love how versatile they are!  Anything you can buy in a bag for under a $1.00 and you can in turn make a [...]

Tuna Salad

Lunch today was fantastic!  I made this delicious tuna salad that held a variety of flavors and textures.  It was a perfectly pallet pleasing sandwich. The combination of the salty tuna, sweet grapes was phenomenal!  Of course, the crunch from the celery and sunflower seeds made it *fun* to eat!!

Wild Rice and Vegetable Soup

Arrrgghh!!! Ava’s had the flu all week.  Between cleaning up nasty messes, mounds laundry, dishes and disinfecting like a mad woman I’ve been trying to stay healthy! Lots of Lysol action and Echinacea.

Not wanting to eat much with being stuck in a house full of flu germs I made this cozy, light soup.  It was [...]

Quinoa Salad

What an amazingly beautiful weekend we had here!  It was so gorgeous outside we could not have asked for better weather.  It was a nice change from the dreary, rainy weather we had all week.

Cream Cheese and Feta Summer Sandwich

I will never forget the first time I had this sandwich.  I was about 12 years old on a picnic with my aunt and her son.  We were out exploring the Montana wilderness.  After driving for what seemed like hours we finally stopped at a quaint little meadow-y area along side the road.  We had the most [...]

Pasta Salad with Creamy Italian dressing

Nothing says summer like a refreshing veggie pasta salad.  I love this recipe because is has all of my favorite vegetables and seasoning in it.  Usually I’m not a huge fan of pasta salads but the creamy vinaigrette on this makes it so light and refreshing.

Spicy Tomatoes and Shrimp

I was craving something warm and filling.  With an almost empty fridge I realized I had a few left over ingredients I could combine to satisfy my need for a warm home cooked meal.  I was pleasantly surprised that my spur of the moment recipe creation came out quite tasty.  To bad no [...]

I’m lovin’ sweet potatoes

Sorry for the lack in posts lately but we have been a sickly crew around here lately. My little tater tot has the been so sick with a horrible cough and pneumonia. So pretty much any free time has been sleep time!
This past weekend I did manage to make a few yummy things like Matt’s [...]
